There’s a new duo concept omakase and French brasserie in town and Yusuke Takada is the man behind the smoke. The visionary chef is best known for his two-Michelin-starred Osaka restaurant, La Cime and ranking consecutively on the World’s 50 Best Restaurants. Mirroring the award-winning restaurant’s ethos, Hanazen promises to present charcoal-grilled Japanese dishes imbued with an innovative French touch. The charcoal grill omakase is set to tantalise with expertly executed smoke-kissed skewers, each paired with a specifically curated sauce to go along. Think chicken liver with classic French white wine raisin sauce and garlic chive butter slathered awabi abalone. Diners will also be able to enjoy a local twist on La Cime’s signature dish of Boudin Dog (blood sausage) which uses different parts of the chicken, edible bamboo charcoal and chicken floss, then fried to perfection.
