Now you can have business lunches at Crystal Jade's first outlet in the CBD: Crystal Jade Prestige. Branding itself as a more upmarket restaurant and using premium ingredients, it offers Chinese dishes such as the signature Classic Pipa duck ($18/regular, $28/half, $48/whole) and Prestige Pipa duck with fermented beancurd sauce ($18/regular, $28/half, $48/whole). The ducks are butterflied and marinated for 10 hours, then blanched and basted with golden maltose sugar and vinegar. They're then air-dried for another 10 hours before they hit the oven. The Prestige version has an additional coat of fermented beancurd sauce. If you can't decide between the two, go for the Best of Both Worlds platter ($48/whole).
Also take the opportunity to taste dishes served at the Michelin-starred Crystal Jade Golden Palace: the chilled yellow cream crab in Teochew style ($76/large), baked lamb rack with red wine and black pepper ($9/person), and sugar-coated yam ($13). These dishes are prepared by chefs who’ve undergone training with the team from Golden Palace.
