Step into a stunningly vibrant dining hall that reminds of Barrio Chino (Chinatown) in Lima, Peru. The interiors take a page off the iconic rainbow mountains in Peru where the red brick walls are juxtaposed with colourful hand-spun Peruvian textiles stretching across the ceiling. Even the background music was an upbeat sequence of Latin American and Chinese songs, giving the space an upbeat energy that reflects both cultures. Here, chef Rodrigo Serrano presents Chifa cuisine, a term used to describe the fusion of Chinese and Peruvian cuisine.
Flavours, textures and techniques don’t stray far from Chifa's Chinese origins but what's new is the incorporation of Peruvian ingredients such as native tubers, corn, and chilli which is uncommon in Singapore. Expect familiar flavours that are vibrant yet packed with umami that Singaporeans have all come to love. Served in large sharing formats, an eye-opening meal here is best enjoyed amongst the conviviality of friends and family.
