With refreshed interiors and a new chef, Laurent Brouard, on board, Bistro Du Vin is poised to reestablish its dominance in Singapore's French food scene. The menu contains the usual litany of French standards: onion soup ($16), escargots with garlic ($18) and steak frites ($48). But beyond the classics, there's the tarte de sardines ($22), a warm tart topped with sardines from Brittany with basil tomatoes concassée, a hearty lobster tail risotto ($39) and daily specials written on the chalkboard.
