90 seconds. That is – approximately – the time needed for each pizza to bake and crisp up at 800° Woodfired Kitchen. By burning applewood chips, the oven gets heated up to a scorching 800 degrees Fahrenheit (or 420 degrees Celcius); the high heat creating delightful charred spots on the crusty pies.
This Los Angeles import, backed by Miami Heat superstars Dwayne Wade and Udonis Haslem, has outposts across the world – from the United States to Japan and Dubai. But the latest Singapore outlet marks the first for Southeast Asia. To cater to the locals, only Halal-friendly ingredients are used (the restaurant is pending its Halal certification).
Specialty creations offer a delicious introduction to what the pizzeria has to offer. The dough comes fermented for over 24 hours, then hand-pressed to help trap air bubbles and create pockets of char.
BBQ chicken ($15/$25) features a sweet-tangy barbecue sauce base, topped with shredded chicken, sun-dried tomatoes, red onion, and provolone cheese; and the Tartufo ($17/$25) is an aromatic pie layered with creamy truffled mushrooms, arugula, and parmesan.
The fun part, however, is the customisable option. Prices start from an affordable $10 for a base of margherita and $12 for a herbaceous pine nut-basil pesto. Then, choose from a range of toppings – options include beef salami (from $2), chipotle peppers (from $1), burrata ($10), and more. Need some recommendation? Pair slices of smoky beef pepperoni (from $2) with heat from jalapeños (from $1), then crack over a soft-boiled egg ($1) for good measure.
Equally impressive is the rotisserie chicken (from $12). Making it is an intensive two-day process: fresh vegetable stock is used to brine the bird, which is then marinated in a blend of herbs and spices. Sauces of truffle ranch and barbecue are available, but the meat is tender enough to be enjoyed as is. Sides of macaroni and cheese and butter corn complete the meal.
