Taking a page from its site’s storied history, The Clifford Pier serves reinterpretations of classic Singaporean dishes in a sprawling 208-seater dining room (formerly One on the Bund) at The Fullerton Bay Hotel. Items such as kong bak pao ($18) get the luxe treatment (and a similarly luxe price) with the use of Iberico pork belly for its filling, while the signature laksa ($19) comes with an option for lobster ($36), king crab ($25) or scallop ($25) add ons, and the rendang ($28) features wagyu hanger steak in the traditional Malay dish’s rich spices. Come suppertime, mealtime favourites like Teochew porridge ($19) and oyster omelette ($16) feature alongside traditional hawker drinks like chilled chendol ($8) and teh tarik ($8).
