Chef Ronnie Chia takes the helm at Tatsuya, newly relocated from the Park Hotel, its home of six years. Taking the place of the short-lived Dim Sake Bar, Tatsuya’s small and simple-yet-classic 48-seat dining room boasts both tables and a sushi bar. The melt-in-the-mouth fish is to die for (flown in fresh from the famous Tsukiji fish market in Japan) but you definitely pay for the taste at $100 for a mixed sashimi platter for two. Not everything on the menu comes from under the sea; splash out on a piece of beef sashimi at $20 a pop, or let the chefs do their thing with the traditional Japanese menu at a minimum of $150 per person.
