Radio DJ and f&b entrepreneur Darren Wee opens a new 64-seater casual restrobar at the new Parc Sovereign Hotel along Jalan Besar’s hipster stretch. The airy, grey-hued space offers French-Japanese fusion signatures like duck confit donburi ($28), marbled-cut sirloin steak with foie gras donburi ($28), and a sous vide salmon with buckwheat soba ($17). To pair with the Asahi and Kronenbourg Blanc beers on tap, order the crackling pork belly ($10), slow-cooked for 48 hours and roasted for the outer crisp, charred cauliflower ($8) with a tangy yuzu veloute, and grilled asparagus ($12) with a garlic miso cream. Besides the Jap-French pair of draught beers, also find on tap a German Weihenstephan beer option, praised for its medium body, creamy texture and long finish.
