The Dempsey Hill enclave is home to plenty of well-loved F&B concepts, and among them are Peruvian and Spanish restaurants Canchita and Tinto. What many might not know is that the establishments are both run by power couple chefs Daniel and Tamara Chavez.

This month, the duo unveils their third concept, Vino Tinto, a Spanish tapas and wine bar, right in the heart of the CBD. This is the second tapas bar to open in Singapore in recent months, with Esquina and La Bottega Enoteca’s chefs debuting Carlitos, a casual neighbourhood tapas joint in Joo Chiat last year.

The 40-seater Vino Tinto will open its doors on January 13 at 1 Raffles Quay, offering over 30 kinds of tapas from all over Spain, plus a selection of Spanish wines. To keep prices relatively friendly, tapas start from $6, while wines start from $14 a glass. Snack on the Tostas Ramona ($24) – crystal bread topped with anchovies and cheese; pulpo a la brasa ($28) – grilled octopus served with Chipotle mayo and grapes; and the Tinto Bikini ($18) – a Spanish sandwich stuffed with Manchego cheese and Serrano ham.

You’ll also find some of Tinto’s signatures on the menu, including unskippable Spanish classics like gambas al ajillo ($26), cochinillo (roasted suckling pig, from $56), as well as a range of paellas (from $28). If you’ve had your fill of paella, an interesting dish to try would be fideuá, a rendition of paella made with fideo (chopped wheat pasta noodles) and less commonly seen in Singapore. Vino Tinto serves the fideuá negra ($32) with seafood and squid ink sauce, as well as the fideuá de credo ($32) with Iberico pork and Padron peppers.

In addition, traditional bocata (Spanish sandwiches, from $12) are available from 8am to 10am and 3pm to 5pm, for a breakfast bite or mid-day snack.

No meal here is complete without a glass of wine – Vino Tinto borrows its name from the Spanish words for ‘red wine’ after all. The wine list features established Spanish wineries from areas like Rioja, Priorat, and Ribera del Duero. For the more discerning palate, there are also special finds from regions like Jumilla, Toro, and Montsant. And of course, as with any respectable tapas house, sangria is a must-have on the menu (from $18 for red or white).
