The highly anticipated four-week residency lands on the shores of Singapore at the historic Fullerton Waterboat House. The brilliance behind the SingleThread fame is none other than Chef Kyle Connaughton and his wife Katina Connaughton. If you didn’t already know, this destination restaurant of Sonoma Wine Country established itself in 2016 and won numerous global culinary awards – they even ranked #37 on The World’s 50 Best Restaurants list. Hence, it comes as no surprise that the restaurant is typically booked months in advance.
For their first foray into a full-length Asian residency, the Connaughtons uprooted themselves, along with a core team of chefs and front-of-house staff, in hopes of recreating SingleThread’s signature soulful, sensorial, and meaningful dining experience. This July, the bespoke experience will feature a seven-course tasting menu that showcases the unparalleled hospitality and seasonal bounties of their Sonoma Country farm, with influences drawn from the Connaughtons’ time spent living in Hokkaido.
Chef Kyle shares, “Our time in Hokkaido was some of the most formative in our lives. Katina and I would sit for hours working on recipes, sharing sake, and talking. It was a way of cooking and a way of life that changed us forever. The experience of gathering around the table with friends and family while enjoying soulful dishes inspired many of the ideas of what SingleThread would one day become. We have this amazing opportunity to create this SingleThread experience and are excited to bring it to Singapore for this limited engagement.”
Expect to be greeted with SingleThread’s signature first course that best captures the essence and moment of each day. Each dining table will be adorned with an expansive black wooden centrepiece covered in flowers, plants, and delicate tableware containing multiple amuse-bouches. A sublime selection of 11 bites will include plump, sweet shrimp (amaebi) from Japan, uni panna cotta, sablé biscuit of cured duck liver parfait, and salmon ruibe.
Textures, colours and appearances anchor the focus of the seven-course menu where it highlights a sashimi course, a donabe served with smoked black cod while it rounds off with a wagashi – a contemporary style of traditional Japanese confectionary served with tea.
This once-in-a-lifetime SingleThread experience is now open for registered interest from now till May 25, to gain early bird reservations before May 27 when the booking is slated to open to the general public. The residency exclusively offers 35 seats for lunch and 50 seats for dinner, both priced at $498++.
