Renowned Dutch chef Sergio Herman to open Le Pristine at the refurbished Grand Hyatt Singapore

Herman used to run the three-Michelin-starred Oud Sluis in the Netherlands

Singapore is no stranger to celebrity chefs and glitzy restaurant openings in hotels – think Josh Niland’s Fysh at The Singapore Edition, Dario Cecchini’s Bottega di Carna at Mondrian Singapore Duxton and many others. To add to the list, renowned Dutch chef Sergio Herman will be unveiling his restaurant, Le Pristine, at the refurbished Grand Hyatt Singapore on October 8. 

This will be the third branch of the casual fine dining outlet – the first Le Pristine opened in Antwerp in 2020 and now has one Michelin star, while the second opened in Tokyo last December and is now listed in Tokyo’s edition of the Michelin Guide. Its opening in Singapore will also mark its Southeast Asian debut. Prior to the launch of Le Pristine, Chef Sergio Herman was most known for transforming his family’s mussel restaurant Oud Sluis into a three-Michelin-starred establishment in the Netherlands. He later closed the iconic institution to focus on developing his own F&B brands like Pure C, The Jane, Airrepublic and Blueness.

At the Singapore outpost of Le Pristine, guests can expect to sample Herman’s interpretation of Italian flavours using ingredients from Zeeland. This coastal province northwest of Antwerp is the largest farming region in the country, and it boasts fertile soils, sunshine, clear waters, and is most known for its fresh seafood. Diners will also get to appreciate Herman’s distinctive culinary style, where he lets the light shine on the natural tastes and textures of the ingredients, and plates up elegant dishes with an effortless touch. Herman will also be incorporating Singaporean influences in the dishes at Le Pristine Singapore.

And it’s not just the food that is slated to impress at Le Pristine. Herman also has a hand in curating the space to showcase his love for music, art, design and fashion. The dining area is designed to evoke a similar ambience to the Antwerp original, and its interiors will be further spruced up with art pieces by prominent Dutch and Belgian artists like the Rotganzen art collective and Maarten Baas.

The launch of Le Pristine Singapore follows the relaunch of Grand Hyatt Singapore this July, after an extensive renovation to refresh the hotel’s rooms and spaces. Le Pristine will be taking over the spot that formerly housed mezza9 – a buffet restaurant that closed in 2022.
