The illustrious Sushi Takahashi from Ginza, Tokyo opened its first international outpost last year in Singapore, much to the delight of omakase fans. The original branch in Ginza is known for its year-long waitlist, which sees diners marking out their calendars months in advance to dine under the hand of sushi maestro Chef Jun Takahashi.
Its Singapore branch is currently helmed by Head Chef Rinto Sasagawa, Chef Takahashi’s trusted protégé who trained under him for eight years. But come March, Chef Takahashi himself will be making his Singapore debut with a limited four-day event at the restaurant. For two sessions a night, he will be serving his celebrated omakase dinner ($420 or $520) in the intimate 12-seater dining space.
Chef Takahashi started his journey as a humble sushi chef before quickly snatching up a stint at Sushi Saito, the three-Michelin-starred establishment in Minato, Tokyo. After six years of honing his craft, he left the acclaimed restaurant to start his own namesake outfit.
The Singapore outlet is similarly dedicated to providing a traditional omakase dining experience alongside the simplicity of Zen philosophy – as evidenced by ingredients air-flown from Japanese fishermen each day and its beautiful Zen-inspired interiors.
