Singapore has plenty of decent Greek restaurants, but a world-famous international Greek chain is joining the lineup. Estatorio Milos opens at Marina Bay Sands this summer, adding to the mall’s lineup of acclaimed restaurants.
The stylish Greek outfit started in Montreal, Canada in 1979, and has outlets in nine locations worldwide, including Athens, New York, London, and Dubai. Its opening at Marina Bay Sands will mark its first foray into Asia. Chef-founder Costas Spiladas champions the traditional Greek concept of philoxenia, which refers to the practice of making a stranger feel at home. The interiors of the 155-seater restaurant are also thoughtfully designed to incorporate elements of Greek architecture.
Seafood lovers will marvel at Estiatorio Milos’ signature ‘fish market’, which sees an astounding bounty of fresh seafood flown in from the Mediterranean, all laid out on ice. Guests will be escorted to personally select their produce before the dish is prepared in the kitchen.
The restaurant’s got other unique practices as well, such as stacking the finest tomatoes into gigantic pyramids for display, only using full-fat yoghurt in its dishes, and using Greek produce like olives, lemons and seasonal fruits in its cocktails. Diners will also get to sample three rare ingredients sourced from Kythira, a remote Greek island: hand-harvested sea salt, thyme honey from small apiaries, and extra virgin olive oil from centuries-old Koroneiki trees.
On the menu are signature dishes like the Milos Special – a tower of crispy zucchini and eggplant with Kefalograviera cheese and tzatziki; grilled seabass; and lobster Athenian pasta. The restaurant also houses the widest variety of Greek wines in the country.
