Heavily influenced by his hometown Puglia, Chef Simone’s new addition include a new selection of tempting starters, salads, pizza, a range of classic and signature pasta, and seafood and meat mains. Start off with the vibrant Caprese Di Mare ($28) where strips of citrus house-cured salmon and a creamy Napoli buffalo mozzarella sit in a mixed bed of flower capers, crisp fennel, and juniper berries. The delicate smokiness of each bite is balanced with a bright zesty dressing to finish. Next up, the soul-comforting Orecchiette Broccoli E Salsicca ($28) is the quintessential pasta dish of Puglia as Chef Simone kneads up a sincerely exquisite Orecchiette – a Southern Italian pasta shaped like little ‘ears’ that are the perfect vessel for holding sauce. Featuring Italian pork sausages, broccoli, toasted fennel seeds, pleasantly sharp Pecorino cheese, and a touch of chilli with breadcrumbs, this eats like a warm hug from Nonna – except Nonna just happens to be Chef Simone.
