Japan-based chef Hide Yamamoto stretches out of his Marina Bay Sands namesake to open an intimate restaurant serving fine dining Kappo cuisine in a chef's table-like format. Wagokoro by Hide Yamamoto serves Kaisen Chirashi ($34), tempura ($28) and steak ($45) rice bowls ($26-$45) and six-course omakase meals ($80) at lunch ($26-$45), as well as eight- ($158), nine- ($238) and ten-course ($300-$500) lunch and dinner sets with dishes stewed, fried, cleaved and intricately plated across the bar. Like most other Japanese restaurants, freshness and seasonality is key, so the dishes on the omakase sets will vary from month to month, but look out for signatures like his oden boiled in duck consomme, seafood and veggie tempura and housemade cold soba noodles.
