The Raffles Singapore's Tiffin Room is drawing attention to a new region you wouldn't associate with wine: India. Showcasing the wines built with Clairette, Shiraz, Voignier grapes picked from the Nandi Hills near Bengaluru and Nashik Valley further up the subcontinent in Maharashtra, Grover Zampa's bottlings are said to pack a signature earthiness coloured with flavours of stone fruits. To pair with labels like Grover Zampa's 'Art Collection' Sauvignon Blanc 2014, 'La Reserve' Shiraz Cabernet 2012 and 'Vijay Amritraj Reserve Collection' Red Blend 2013 are four courses of Indian dishes – vegetarian ($65) and meat-loving ($80) – like slow-cooked lamb with fenugreek leaves and tomato puree, cheese-stuffed morel mushrooms and cauliflower cury.
