Knighted Jakarta-based chef Gilles Marx pops into town to showcase his native French fare in a five-course wine dinner ($298) at Scotts 27. On the menu are the signatures he serves in AMUZ, including black Périgord truffles shaved on angel hair pasta, and whole barramundi baked in a sea-salt crust, designed to pair with wines like Domaine du Nozay Sancerre 2012 and Domaine Francols Carlllon Chassagne Montrachet Clos St Jean 1er Cru 2010.
