We’ve given mention to the excellent cocktails available at award-winning Australian chef Tetsuya Wakuda’s MBS outpost – previously the only other way of getting a peek into the ultra exclusive fine-dining spot without forking over $400++ for the daily ten-course set menu in the dining room. Now, The Bar at Waku Ghin has launched an à la carte bar menu, with tapas-style dishes from $38++. There are options like Aburi ocean trout grilled with soy, chilli, yuzu and olive oil ($38), salad of the sea (a mixture of shellfish and raw fish with vinegarsprinkled rice, $65) and the Ghin Wagyu beef open sandwich (a whopping $80, pictured above), plus a selection of oysters, caviar, pastas and cheeses.
While seating is still limited – the bar counter seats eight, smaller tables can accommodate up to about 20 people – walk-ins are accepted and last food orders are at midnight, allowing you to linger long past the dining room seatings. And of course, there’s still the must-try drinks list, featuring 85 hand-crafted cocktails (from $20++) to choose from, as well as whiskies and sake. Also available is the Waku Ghin Isojiman Junmai Daiginjo M label, which has been produced exclusively for the venue – chef Tetsuya is the brand’s first sake ambassador to be appointed outside of Japan.
