Hawker Chan: Michelin-starred Hong Kong soya sauce chicken restaurant opening in November

It's been a busy three months for chef Chan Hon Meng. Not only has he earned himself a Michelin star, he has now teamed up with Hersing Culinary to set up Hawker Chan, a quick-service restaurant that will open at 78 Smith Street in November.

Hersing Culinary is no stranger to the F&B scene. It brought Tim Ho Wan to Singapore in 2013 and has expanded the franchise to nine countries in the past three and a half years. It plans to chart similar growth for Hawker Chan, its first Singaporean brand.

Contrary to previous reports, Chan has not sold his recipe. Instead, he has a '50-50' partnership with Hersing, which invested $1 million to develop Hawker Chan.

Chan's original stall at Chinatown Complex Market and Food Centre will continue to operate under an apprentice, and prices will remain the same. Chan will instead be spending most of his time at the new restaurant – which is a 3-minute walk away from his old stall – to ensure that the quality of the food is up to scratch. Hawker Chan seats 80, will be fully air-conditioned and, in case you're wondering, its prices are expected to be competitive with those of regular food courts.

Hawker Chan will open at 78 Smith Street, Chinatown in mid-Nov 2016.
