Take the glass elevator up the NCO Club, turn the corner, and you’ll find yourself in the glamorous cocktail haven that’s Madame Fan Bar. This lavish, intimate 40-seater space is helmed by head bartender Chew Qing Ting who has mastered the art of libations at Origin Bar in Shangri-La previously. The bar’s current menu sees a medley of Western cocktail classics reimagined with Chinese tales and ingredients in mind ($25 each).
One of the most representative pours on the list is the Concubine Sour – think classic New York sour meets lychee martini in this drink inspired by the Tang Dynasty. And if you're seeking something bolder, the Mandarin Mist is a fresh take on the classic screwdriver (traditionally made with orange juice and vodka), infusing clarified mandarin juice with a hint of smoky peat for a touch of edge.
Other highlights include the travel-inspired Two Nights in The Himalayas, a combination of Bacardi rum, pu-er tea and curry powder; as well as the dreamy Dragonfly, where gin and whisky complement subtle chrysanthemum notes to evoke the image of dragonflies dancing in the breeze.
Chef Pak Chee Yit of the award-winning restaurant Madame Fan is also behind the curation of the modern-Cantonese bar bites at the bar.
