Here at Dimple, the Chinese principles of love, abundance, and harmony take centre stage, and the bar aims to replicate the energy of Hong Kong’s bustling streets. A fruit-forward curation of 14 signature cocktails ($25) makes up its opening menu, categorised by strength for easy ordering. There’s the approachable lychee sour for starters, described as having a silky and delicate mouthfeel thanks to a mixture of wolfberry-infused salt vodka, lychee sake, and egg white. Then, move on to fruity mid-strength drinks like the tangy passionfruit martini or citrusy mandarin orange highball, or for something even boozier, the cherry Manhattan or hazelnut old fashioned.
