Past the long queue outside, there’s an automat that collects your orders and then prints out a receipt for you to hand to the servers inside. The interior resembles a Japanese ramen bar and you take a seat on a stool while you observe the bowls of pho that come out quite quickly. It’s fascinating to lean over and see how fresh the ingredients are. Generous with the bean sprouts, onions and yellow radish, which are served on the side, we recommend their pho with all the fixings: tendon, brisket and flank. Topped with scallions and fresh chilies, the broth is clearer than what I might normally expect from a pho and the lack of oil gives the bowl a healthier edge.
