Bracero’s “cocina de raiz,” or roots cooking, has its origins in chef Javier Plascencia’s Baja California upbringing. The restaurant’s beef cheek taco is a classic example of the kitchen’s elevated take on street food: soft meat heaped into warm tortillas with fresh onion and cilantro.
