Beaufort Local, formerly Beaufort Street Merchant, seems more facelift than radical fitout at first glance. A closer look shows otherwise. Original plans would have seen Enrique’s School for to Bullfighting next door consumed by a bigger Merchant, but it seems that Scott and Angie Taylor had second thoughts. Enrique’s has carved its own spot in Highgate over the last few years as a tapas bar. Beaufort Local has increased its foot print with a rear garden bar – further raising Highgate’s claim to being Perth’s best locale for dawn-to-dusk pit stops.
