Let’s honor the masters first, with one of the most beloved pastry chefs in France – and worldwide –, Philippe Conticini. The man who revolutionized the Paris-Brest and invented the "cuddle cake" has created an airy log this year. Its glittering appearance, like a ball gown, sparkling like the most beautiful ornament on the tree – the one you display in the middle –, will for sure dazzle the whole family. We couldn't resist its very original composition. On one side, a light and mildly sweet chestnut mousse, enhanced with a touch of Armagnac, enough to delight Uncle but not too much to discourage the kids. On the other, a sour cherry confit, tangy and enhanced with yuzu, ginger, and vanilla. Light, very fruity, crispy, cuddly, in short: impeccable.
