By cutting out the middleman, fishmonger Dominique Maury keeps his prices down and brings punters closer to the source of their seafood. At his fishmonger in the Marché Saint-Quentin, which caters to some of the best restaurants in Paris, Dominique has installed a small bar with a few seats, making for an atmospheric apéro. Customers can enjoy excellent, fresh seafood, from oysters (€12 for a dozen) to sashimi sliced before your eyes (€10), all washed down with a perfect glass of wine, perhaps a Muscadet (€3).
