The highly anticipated Expo 2025 Osaka, Kansai, Japan is now underway, with countries and corporations presenting their visions and technologies for a better and more sustainable future. But it’s not just the pavilions that are embracing the Expo’s motto, ‘Designing future society for our lives’; even the restaurants at the site are contributing to this meaningful mission.

One of Japan’s leading sushi restaurant chains, Sushiro, has reimagined the future of dining with a concept restaurant at the Expo. Housed in a sleek structure in the Forest of Tranquility zone, Sushiro to the Future: Expo Edition is serving an exclusive menu for which all the seafood is sourced from eco-friendly aquaculture facilities, including sushi made with fish raised using sustainable land-based farming methods.

The restaurant’s in-store experiences further complement this concept by encouraging you to learn about marine conservation and sustainable fishery initiatives while enjoying your meal.

Sushiro to the Future: Expo Edition’s food offerings are not only good for the planet – they’re diverse and inclusive, too. There are around 150 items to choose from, including the ‘Fish of Tomorrow’ series, which features premium Ryudai miibai (Okinawan grouper), saba (mackerel), bikara eel and more, all farmed on land using environmentally responsible methods.

Additionally, the restaurant is pork-free and uses no lard. Its tonkotsu-style ramen is made without pork bones, and it even offers plant-based sushi. This inclusive approach creates a new take on Japanese cuisine that takes into account a wide range of religious and dietary restrictions. You’ll also be glad to know that sushi starts from just ¥160 a serve.

At certain times of day, Digiro, the touch-screen ordering system at every table, will launch the Expo-exclusive Uni Catch Game simultaneously, giving everyone a chance to win original Sushiro merchandise. This, along with the immersive digital display resembling an aquarium at the entrance, serves as an interactive element to engage diners with issues facing our marine environment today and the technologies being developed to address them.

Sushiro to the Future: Expo Edition is open daily until October 13, from 10am to 9pm. Given its popularity, reservations can only be made on the day at the restaurant. Thankfully, there’s a dedicated webpage where you can check the waiting list.
