An import from Paris, Fulgurances Laundromat flew on over to New York in 2021. Opening in a former laundromat space in Greenpoint, the culinary incubator concept gives up-and-coming talent the chance to run their restaurant, their way. And since November, Top Chef alum Rasika Venkatesaalum has been in charge of the show. With one week left of her residency, now is the time to catch her in action. 

Growing up in India, Venkatesa started cooking in the kitchen alongside her grandmother. As an adult, Venkatesa began her training in California, first at the French Laundry before becoming the chef de cuisine at San Francisco's Mourad at the ripe age of 23. Since her run on Top Chef, she launched a progressive South Indian pop-up, Mythily, where she interprets Tamil recipes through a modern lens. Bringing her pop-up to Fulgurances, dishes have included the street snack Paruppu Vadai with chickpea lentils and dry chilies, and a tres leches cake soaked in saffron and cardamom milk. The tasting menu will run you $94; optional wine pairing for $65. Get your tickets before she's gone!
