West Village floral emporium Spruce planted a tiny new sampling in Chelsea with a petite shop that showcases sleek minimalist decor. It all reflects the tastes of owner and designer Gaige Clark, who opts for simplicity when it comes to flora. Clark crafts arrangements with flowers imported directly from Holland and Ecuador; and though she specializes in custom orders, premade bouquets include a Rose Cub with nine roses tightly arranged in a square ($75) and the Manhattan Window Box ($150-$250), a stainless steel rectangle filled with fresh blooms.
