Fleishers Craft Butchery

Since 2004, aspiring butchers have been honing their carving skills at this Kingston, NY, butcher shop and training center. It also has an outpost in Park Slope, offering pasture-raised beef, lamb and pork, and free-range, organic poultry to the Brooklyn masses. Also on offer: a range of house-made charcuterie, cold cuts and sausages, plus pantry staples like produce from Gotham Greens, organic spices and dried pastas, and an American cheese counter.
