The owners of the space that once housed Scott Conant's Faustina and Govind Armstrong's Table 8 forgo big-name chefs this time around. The low-lit Trilby (named for a fedora-like hat) is a stylized cocktail lounge and eatery featuring tree-trunk tables, sweeping plum-colored curtains and plush gray velvet couches. Sample the namesake cocktail, a mix of Scotch, sweet vermouth, a curaçao liqueur, orange bitters and a dash of absinthe, alongside small plates (warm artichoke dip, steak tartare) or larger ones (braised lamb shank, steamed PEI mussels).
