The pork-filled specimens that emerge from the kitchen—available steamed as a starter or deep-fried and dropped into an entrée noodle soup— are exceptionally juicy and plump. Vegetarians will find respite in the meatless selection of cold noodle dishes, among them a fine plate of thin buckwheat noodles with hot chili paste and a whole garden’s worth of raw shredded veggies.
