The pies, baked in a stone hearth over an aromatic blend of smoldering oak and cherrywood, arrive a bit undercooked, but ultimately succeed through bold flavor combinations; the Bianca wows with an intense blend of fontina, Gorgonzola, speck, prosciutto and caramelized onion.
