If the menu at R.U.B. (Righteous Urban Barbecue) seems unusually authentic, there’s a reason why: Paul Kirk, a Kansas City legend who’s won hundreds of awards and authored several books on smoking and grilling, designed all the recipes and menu contents. The result is pure pig heaven. Head chef Scott Smith slow-smokes pastrami for 14 hours and serves “burnt ends”—brisket that’s smoked twice and cooked well-done. You’ll have a heck of a time getting the kids out of here with clean faces.
