Every so often, a Philadelphian decides that New Yorkers have no clue about cheese steaks, and a new sandwich joint is born. Owners John Yih and Steven Kay scoured Philadelphia for six years, tasting hundreds of sandwiches before they designed their definitive version and started selling it in this tin-ceilinged space: thinly sliced top-round beef served on hoagie rolls delivered daily from South Jersey. You can get yours with or without onions and Cheez Whiz. It’s a sacrilege, but the partners are selling vegetarian sandwiches, too.
