For over 20 years, Angel Jimenez has served his famous lechon asado in a trailer parked in the South Bronx. While the dish is usually cooked on a spit, Jimenez slow-roasts his pigs for eight hours inside a wood-fired oven parked on the sidewalk. Beyond pork, mofongo and octopus rotate on the regular. If Jiminez asks to dress it his way (aka adding a sauce that has been nicknamed "God's Juice"), always say yes.
