Push the "champagne button" on mezzanine tables and a server will appear bearing a bottle of bubbly. The baroque plates—burgundy snails with mushroom butter, lamb saddle with winter-bean stew, pig's head tortellini—are the work of chef Francis Derby (wd~50, Momofuku Ssäm Bar).
