The former culinary wasteland known as Midtown West has gotten a boost as of late, thanks to additions like Gotham West Market and the impending Hudson Yards. Archer Hotel gets in on the action with this skylighted American dining room, helmed by celebutoque David Burke (Fishtail by David Burke, David Burke Kitchen). From the open kitchen, equipped with a wood-burning oven, come dishes like grilled-octopus tacos, avocado panna cotta and baked pork shoulder with basil ricotta. Himalayan salt slabs come into play both on the plate—for roasting skewered duck breast and testicles—and in the decor: A wall is constructed of the pink salt bricks.
