Simply mention how delicious the chicken makhani is, and the waiter will rattle off a list of ingredients—and call nearby specialty market Kalustyan’s (same owners) to ensure that every spice is in stock. You might even be lucky enough to receive an after-dinner treat of sweet cardamom rice on the house.
