Light and airy puff pastry takes the place of standard-issue bread at this 12-seat sandwich cafe. But instead of traditional French cream, chefs Damian Sansonetti (Bar Boulud) and Damien Herrgott (Bosie Tea Parlour) are filling their choux with hearty fillings like fried chicken, smoked salmon and spicy sausage. Premade choux boxes pack in one meat-filled sandwich, a choise of side (French fries, orzo salad) and two of the eponymous cream-filled spheres. Behind a glass display, see the custard-thick fillings piped daily in variations ranging from Nutella to cheesecake to popcorn. A selection of La Colombe espressos, capuccinos and cold brew is available to pair with the puffs.
