With an armful of James Beard Awards and stacks of glossy magazine tributes, Daniel Humm hasn’t exactly been toiling in obscurity. The Swiss chef’s legions of food-obsessed fans may be Bieberian in number, but boy, does he continue to earn them. Humm was in auteur mode this year, awing at the grand NoMad with tangles of lemony tagliatelle and king crab, and multicolored planks of slow-roasted carrot, blasted with cumin and draped in duck skin. But he also reinvented his Gramercy gem, Eleven Madison Park, by rolling out a new menu, a hymn for Gotham’s dining history: sturgeon unveiled in a smoke-filled cloche, tableside egg creams and an haute cuisine take on the New York cheesecake. So even in a year that brought San Franciso Goliath Danny Bowien (Mission Chinese Food) to our shores and saw Roberta’s chef Carlo Mirarchi move beyond farm-to-table rustica at Blanca, Humm ran away with your votes. 1170 Broadway at 28th St (347-472-5660, thenomadhotel.com)
