Hoagie perfection is all about the bread—or so say the cheese whizzes at this gruff but lovable spot. Sure, fromage is vital (choose from American, provolone or Whiz), as is good ’n’ greasy griddle-cooked sliced sirloin and fresh onions. But the firm, fresh buns make Carl’s cheese steaks taste like something you’d nosh between visits to Independence Hall and the Liberty Bell. The thirsty rolls sop up the liquefied fat while staying firm to the last bite. The Pizza Steak is made with marinara sauce. The Cheesesteak on a Plate, Hold the Roll, is beloved by Murray Hill’s carb-counters. But where’s the fun in that? We say, “Bun appétit!”
