It’s not easy tinkering with the classics, but chef Ivy Stark keeps proving us wrong with her refreshing take on some of our favorite cuisines. Exhibit A: the tableside guac you’ve likely tasted at Gotham favorites such as Dos Caminos and Rosa Mexicano, two kitchens she’s helmed. With BKLYN Wild at Time Out Market, Stark is embracing a healthy plant-based menu that focuses on local ingredients that are actually local—as in, Brooklyn. This way, everyone can dig in, no matter their dietary restrictions. We can’t wait to experience what Stark will do next in this space.
