88 W Broadway between Chambers and Warren Sts Culinary heavyweight David Bouley teams up with Isao Yamada—head chef at Bouley’s kaiseki restaurant, Brushstroke—to present this master class on the merging of Japanese and American cuisines. A maximum of 50 guests will have the opportunity to watch the eminent duo in action as they demonstrate how they work with indigenous Japanese ingredients such as kudzu root (an Asian plant) and sake lees (leftover sediment from sake production) at the acclaimed Tribeca eatery. In the process, guests will learn how chefs temper these exotic products to suit Western palates, while sampling selections of the produce throughout.
