It’s made of a slice of real watermelon stuffed with homemade sorbet and topped with sea salt. Oh, and those seeds are actually chocolate. The dessert has been at the bakery’s Tokyo location for a while now, but this is your only chance to get it in NYC.

Find it at the shop’s pop-up ice cream window, along with the summertime cold-brew soft-serve ice cream. It’ll only be available Saturday through Tuesday from noon until it sells out, so take advantage of the city turning into a ghost town for the holiday and go stuff your face.
