Veggie burgers that bleed are already a thing—now, New York is getting sushi made of tomatoes.
Grocer chain Fresh&Co will begin serving the fish-free "sushi"—made with sous vide Roma tomatoes chosen to mimic the hue and texture of bluefin tuna, a vegan alternative thought up by owner George Tenedios and San Francisco-based chef James Corwell—at each of its locations in October. The tomatoes will be showcased in four dishes: an aloha salad, a poke salad, a collard-green wrap and a togarashi-yuzu bowl.
