It's August—we know, we can't believe it either—which means it's National Sandwich Month, and Kossar’s Bagels & Bialys is celebrating on the Lower East Side with sandwich collaborations all month long.

Each week, the legendary bakery—which reopened at 367 Grand Street this February following a five-month renovation—is partnering with a nearby restaurant, from Ivan Orkin's Clinton Street ramen-ya Ivan Ramen, to Jonathan Wu's creative Chinese-American kitchen Fung Tu, for sandwiches both sweet and savory. One-hundred percent of proceeds will benefit Edible Schoolyard NYC.

Check out the full weekly breakdown of Kossar's sandwich collaborations below:

August 1–7: Ice & Vice's Everything Black
A scoop of Basic B ice cream (Mexican vanilla with black-lava sea salt) is wedged between two black-and-white cookies coated in everything seasoning.

August 8–14: Ivan Ramen's Bialy Bonito Melt
Oil-poached tuna is dressed with garlic mayo, melted Swiss, scallions and bonito furikake on a Japanese everything bagel.

August 15–21: Fung Tu's Smoked Chicken Sandwich
On a garlic-chive-sesame pletzel (a focaccia-like Jewish flatbread), get smoked chicken with Sichuan seasoning, avocado, lettuce, tomato and matchstick potatoes.

August 22–31: Justin Warner's Foie Gras Sandwich
A collaboration with Food Network star Justin Warner (the former owner of Michelin-rated Bed-Stuy spot Do or Dine), this savory-sweet sammie features foie-gras cream cheese and jelly on a salted cinnamon-raisin bagel.
