Operating as a coffee counter in the morning, the marble bar switches to cocktails around midday, employing local spirits in classics like Manhattans with Catskill’s Defiant Rye, sidecars with Tuthilltown’s Hudson Baby Bourbon and the Bond-approved vesper with NY Distilling Co.’s Perry’s Tot gin. Beers also skew local, including Ommegang Rare Vos Amber Ale and Kelso Nut Brown Ale. And Mr. Bond himself would feel at ease in the 1950s-esque digs, all herringbone floors, lit fireplaces and leather armchairs.
