The key ingredient in Natalie Jacob’s Sunny Side Up Fizz, Tequila Herradura, may hail from south of the border, but her unique cocktail evokes that most American of institutions: the old-school luncheonette. And her favorite old-world diner was a big part of the inspiration behind her new drink. “I love history, and going in there inspires me because it transports me to another place and time,” says Jacob, whose love of everything old-school extends to the vintage clothes she wears and antique glassware in which she serves her throwback concoctions. When she’s at the luncheonette she can usually be found ordering coffee, eggs and a milkshake, and all of those flavors come to play in her creamy new instant classic, the Sunny Side Up Fizz. Take a sip—you may just be transported, too.

Sunny Side Up Fizz
1 ½ oz Tequila Herradura Reposado
¾ oz coffee liqueur
½ oz cinnamon syrup
1 whole egg
Club soda
Cayenne pepper
Dry shake all ingredients except pepper and soda, then shake with ice
Strain into a fizz glass, top with soda, and dust cayenne on top
