If you're looking for an indelible restaurant in Montreal for contemporary Quebecois cuisine, chef Normand Laprise's Toqué! is an essential figurehead of the city's dining scene. The chef literally wrote the book on QC gastronomy—Toqué! Creators of a New Quebec Gastronomy, and a James Beard award-winner at that—and his restaurant was one of the first to loudly and proudly fly the banner of farm-to-table food and market-based menus. Since then, Laprise's restaurant has been the training ground for a generation of Montreal's best contemporary chefs. This is the place for Quebecois cuisine par excellence.
